When you click on the "Watch this deviant" link this little pop-up appears. There you can select what of the deviant you want to be notified of (notice the separation of News and Journals!) and in which group you want to put them. (Creating groups still belongs in the "Manage Friends" page.)
Disclaimer: this idea isn't totally new, it has been proposed in the Suggestion forum before, and I even made a similar mock-up a while ago and posted it in the forums as well. I re-did it now to match the dA v6 design.
But that's not the point of my reply. I've replied to ask you... I haven't seen any features to beta test, and I did say I wanted to be a beta tester. I even have the premium membership to do it with.
My question is... How do we know when we're testing something vs. just using one of the regular features?
Not everything goes out to beta-testers. It's a bit random, really. No messages are sent out either. The only way you can really find out if there's something to test is to check the Beta Feedback Forums frequently, or whenever you see something change.

All beta testing now goes through #devBUG so I recommend watching that
